Coconut oil is a plant‑derived oil obtained from the dried or fresh meat of coconuts (Cocos nucifera). It’s solid at room temperature and becomes liquid when heated. Different varieties include virgin/unrefined coconut oil (which retains coconut flavour and some antioxidants) and refined coconut oil (neutral in taste with a higher smoke point).
Nutritional Profile:
Coconut oil is almost entirely fat (about 99%), with most of it being saturated fat. A large portion of that saturated fat consists of medium‑chain triglycerides (MCTs), especially lauric acid, which is metabolised differently from longer‑chain fats. It contains no cholesterol and negligible protein or carbohydrates.
